Creamy Cucumber Salad


This is an easy side dish that goes well with lots of different main courses. It’s also good to bring to a picnic or potluck.

  • Cutting board
  • Sharp knife (adult needed)
  • Mixing bowl
  • Measuring cup
  • Measuring spoons



  • 1 large English cucumber or 2 traditional cucumbers washed and peeled
  • 1⁄4 cup plain yogurt
  • 1 tablespoon rice vinegar or fresh lemon juice
  • 1 tablespoon finely chopped fresh mint, dill, or basil leaves
  • 1⁄4 teaspoon salt



  • Cut the cucumber into thin rounds and put them in the bowl.
  • Add the yogurt, vinegar, herbs, and salt to the bowl and mix well.
  • Serve right away or cover and refrigerate up to 2 hours.
