Stewed Cauliflower, Tomatoes, and Onions

Ingredients

1 tablespoon vegetable oil
1 onion (medium)
1/4 teaspoon garlic powder
1 head of cauliflower
2 tomatoes (large)
1/2 teaspoon ground black pepper
1 tablespoon parsley (dried)
1/4 cup Parmesan cheese (grated)

Directions

  1. Wash hands with soap and water.
  2. Chop the cauliflower into 2 inch pieces.
  3. Peel the onion. Chop it into small pieces.
  4. Chop the tomatoes into small pieces.
  5. Put the cauliflower in a pan. Add 1 inch of water.
  6. Cook over medium heat, and let it boil for 3 minutes.
  7. In a large pan, heat the oil, and add the onion.
  8. Cook over medium heat for 3 to 5 minutes.
  9. Add the garlic and cauliflower.
  10. Cook while stirring for 3 minutes, until lightly browned.
  11. Add the tomatoes and pepper.
  12. Cook for 5 more minutes.
  13. Serve with a sprinkle of parsley and cheese.
