Roasted Cherry Tomatoes

We hate, hate, hate to compare these to candy, because honestly these tomatoes are so much better, but they are sweet, small, and hard to stop eating. If you don’t gobble them all up, you can add them to lots of different dishes: pasta, a sandwich, a salad, or your favorite omelet.

  • Large bowl
  • Measuring spoons
  • Spoon, for mixing
  • Rimmed baking sheet
  • Pot holders
  • Heatproof spatula

Ingredients

 

  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 1⁄2 teaspoon kosher salt
  • 1⁄4 teaspoon black pepper

Instructions

 

  • Turn the oven on and heat the heat to 425 degrees.
  • ​Put all the ingredients in the bowl and mix well.
  • Put the mixture on the baking sheet and spread evenly.
  • Once the oven temperature has reached 425 degrees, put the baking sheet in the oven and roast until the tomatoes are wrinkled and beginning to brown, about 30 minutes. Serve right away. 

Notes

TOP THIS

Add 2 tablespoons chopped fresh herbs, like basil, parsley, or cilantro at the end.
