Herby Lettuce Wraps

These do-it-yourself lettuce wraps are Chinese in origin, but here we’ve seasoned them with herbs in a way that’s more traditionally Vietnamese. So they’re not authentically anything, but they’re completely delicious!

kitchen gear

  • Cutting board
  • Sharp knife (adult needed)
  • Measuring spoons
  • Garlic press
  • Zester or grater
  • Spatula
  • Large skillet

Ingredients

  • 1 tablespoon vegetable oil
  • 3 scallions, greens and whites, thinly sliced
  • 2 garlic cloves, peeled and minced or put through a garlic press
  • 1 teaspoon fresh ginger, finely chopped or grated
  • 1 pound ground turkey or lean ground beef
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar or white vinegar
  • 8 soft lettuce leaves
  • 2 cups chopped fresh herbs: basil, mint and/or cilantro

Instructions

  • Put the skillet on the stove and turn the heat to medium. When it is hot, add the oil, scallions, garlic, and ginger. Cook, stirring, until the mixture is bubbly and fragrant, about 2-3 minutes.
  • Add the turkey or beef to the skillet and turn the heat up to medium-high. Cook, breaking it up with the spatula, until the meat is cooked through and browned, about 5 minutes.
  • Add the soy sauce and vinegar and cook, stirring, until the liquids are absorbed, 1-2 minutes more. Taste the mixture and add more soy sauce or vinegar if you think it needs it.
  • To serve: Put a spoonful of the meat mixture into a lettuce leaf, add the herbs, roll and eat right away.
