Ingredients
- 3 tablespoons vinegar
- 1⁄4 cup olive, canola, or vegetable oil
- 1⁄2 teaspoon curry powder
- 1⁄2 teaspoon dijon mustard
- 1⁄2 teaspoon salt
- 6 cups flat-leaf or baby spinach, washed well
- 1 large apple, scrubbed or peeled, and diced
- 1⁄2 cup raisins
- 2 tablespoons lightly toasted sesame seeds
Instructions

Put the vinegar, oil, curry powder, mustard, and salt in the bowl and using the fork or whisk, stir well.

Add the spinach, apple, raisins, and sesame seeds and toss to combine. Serve right away.
Notes
To toast sesame seeds, put a small skillet on the stove and set the heat to medium. Add the sesame seeds and cook, stirring, until golden, 2-3 minutes.
