Neftali Duran
During a Facebook Live session, Neftali Duran—a bilingual program coordinator with Cooking Matters Massachusetts—demonstrated a colorful way to make fruits and vegetables fun for children. Neftali, who’s based in Western Massachusetts, led a discussion about how kids can have fun with their food (whether it’s making it or eating it)! We eat with our eyes first, especially when we’re little and just learning about new foods. Neftali prepared a phenomenal veggie tray, using peppers and cucumbers cut to look like train carriages, that kids of all ages would love to help build AND dig into. Besides cooking Neftali enjoys learning how to grow different crops, corn, squash, hot peppers and more. He also tries to can and preserve as much food as possible during harvest season. That includes freezing ramp pesto, canning hot salsa, to dehydrating mushrooms and apples. From growing to preserving I want to be empowered to eat seasonally, save money and build my own skillset.
