Ingredients
- 3 cups cooked orzo, cooled
- 1⁄4 cup lightly toasted walnuts, chopped
- 1 small zucchini, grated or chopped
- 1 carrot, scrubbed and grated or sliced
- 1⁄4 cup fresh basil leaves, chopped
- 12 cherry tomatoes, quartered
- 1⁄4 cup raisins
- 1⁄4 cup freshly grated Parmesan cheese
- 1 1⁄2 tablespoons lemon juice
- 2 tablespoons olive oil
- 1⁄2 teaspoon salt
Instructions

Put all the ingredients in the mixing bowl and stir well.

Serve right away or cover and refrigerate up to 2 days.
